At Keio Plaza Hotel, we have many professionals in various fields, and the steward is the person who manages all the tableware, fixtures, and equipment used throughout the hotel. In other words, they are the masters of these items.
Keio Plaza Hotel has approximately 1,300 different types of tableware and equipment. This includes around 150,000 pieces of plates and dishes, 56,000 glasses, 127,000 pieces of cutlery, and 8,000 pieces of silverware (as of 2020). The steward’s job is to efficiently distribute these items to Banquet Rooms and various restaurants within the hotel. They meticulously control the flow of these items on a daily basis. Additionally, the steward’s specialized knowledge is essential for managing the different cleaning methods required for various materials such as porcelain and silverware.
When opening a new restaurant or renovating an existing one, the steward also plays a crucial role in determining the types and quantities of tableware needed, as well as sourcing and proposing items that align with the head chef’s vision. It takes approximately 7 to 8 years of experience to become proficient in selecting the perfect tableware that enhances the presentation of dishes, facilitates service, and provides an enjoyable dining experience for guests.
