One of Keio Plaza Hotel's signature menu items, the German Cheesecake, has been cherished and loved by many since the hotel's opening. Its traditional taste features a beautifully browned top, a fluffy and moist texture, and a rich yet surprisingly light flavor. The recipe was created by Hartmut Keitel, the hotel's pastry chef and a renowned confectionery artist, under the guidance of the hotel's first German Executive Chef, Paul Muller. The key to this cheesecake is “hot and high temperature”. The custard, cheese, and meringue are mixed together while still hot, with the mixture being stirred thoroughly before it cools down. The cheesecake is then baked at a high temperature of 200 to 230 degrees Celsius, which helps to lock in the moisture and create its unique texture.
Even today, most of the sweets served within the hotel are handmade by our skilled pastry chefs. The original taste of the German Cheesecake has been passed down from generation to generation, and continues to be enjoyed by our guests.
