It is often said that the beauty of tempura lies in its simplicity. At Shun Tempura, located on the 7th floor of the Main Tower, we have received high praise for our exquisite and light tempura made from carefully selected treasures of the sea and mountains. The key to this deliciousness lies in our special blend of oils, which we are very particular about, in order to bring out the natural flavors of the ingredients.

Shun Tempura uses a special blend of two types of sesame oil, each made using different methods. One is a cold-pressed oil, made by pressing raw sesame seeds without roasting them. The other is a traditional, slow-pressed oil, made by carefully extracting oil from roasted sesame seeds using an old-fashioned pressing method. These two oils are blended together in a unique ratio to create a light and aromatic oil that retains the natural flavor of sesame.

In addition to our special oil blend, we also place great importance on the "resting" period after frying. Instead of serving the tempura immediately after frying, we allow it to rest for a brief moment using residual heat. This technique enhances the flavor and texture of the tempura, making it fluffy and bringing out the unique taste of each ingredient.
