“Revival Zero” is a cocktail that was created with the hope of reducing food waste, which inevitably occurs in the course of business.
It uses all the leftover grapefruit peels after juicing, aiming to contribute to the reduction of food loss.

Bartender-Invented Sustainable Cocktail "Revival Zero"
We used “Sakekasu Fermented Oleosaccharum” (a natural, refreshing grapefruit-scented syrup made by massaging sugar into grapefruit peels to extract the oils and other components, combined with a carbonated juice fermented from leftover juice and sake lees) as one of the ingredients. For the base, we used Nanbu Bijin Craft Vodka from Iwate Prefecture, which is filtered through birch charcoal and is characterized by its umami derived from rice and clear taste. We then added birch water (birch sap), which is rich in minerals and nutrients, to create a cocktail with great balance and compatibility. For decoration, we reused grapefruit peels! Please enjoy the refreshing citrus aroma and mellow, gentle taste of this cocktail made with whole grapefruits.
